This is another firm favourite in our house. It's super easy, you can marinate overnight, a couple hours or not at all, it is always full of flavor. I tend to go a little heavier on the lemon, just because it's delicious.
In a large bowl season the chicken drums with dried oregano, dried thyme, coriander, smoked paprika, salt, pepper, and garlic.
Pour the olive oil and lemon juice over the chicken drums. Toss everything very well. Marinate if you have the time.
Preheat oven to 190 degrees. Line a dish with baking paper.
Place the chicken drumsticks in the prepared baking dish.
Roast for 30 minutes or so until they begin to brown.
Flip the pieces, and bake another 10-15 minutes or until the chicken has cooked through. Enjoy.
